To celebrate the birthday of my mother and my boyfriend’s mother, I thought it would be nice idea to make some festive cookies. And trust me when I say that they are just as fun to make as they are to eat! These are the ingredients needed to bake around 24 simple and delicious birthday cake cookies:

Ingredients for ± 24 cookies:

❏ 225 g flour
❏ 1/2 teaspoon baking soda
❏ 125 g butter, room temperature – I used unsalted butter, but you can also use the salted version
❏ 125 g sugar
❏ 100 g brown sugar
❏ 1 egg
❏ 1 teaspoon vanilla extract
❏ 100 g white chocolate chips – or chocolate chunks made from a bar of white chocolate
❏ 80 g rainbow sprinkles – I used bake stable sprinkles as their color doesn’t bleed into the batter

Other:
❏ Big bowl
❏ Mixer
❏ Ice cream scoop or spoon
❏ Baking tray with parchment paper 

How to:

1) Preheat the oven to 175°C
2) Mix the butter, sugar and brown sugar. Make sure to use room temperature butter, you can either leave it out of the fridge for 2 hours or put it in the microwave for just a few seconds – but make sure not to melt it!
3) Add the egg and vanilla extract and mix
4) Next, add the flour and baking soda and mix until all ingredients are combined
5) Gently knead the chocolate chunks/chips and sprinkles into the mixture with your hands or with a spatula
6) Put parchment paper on a baking tray and scoop out balls of dough with an ice cream scoop or spoon. Roll the dough balls between your hands until they are nice and round and place them on the baking tray. Make sure there is enough space between the cookies, as they will spread out in the oven
7) Bake the cookies in several rounds (of approx. 10 to 12 minutes) until done. Add a few more sprinkles on top while they are still warm and enjoy!
